Domori was the first chocolate manufacturer to use exclusive cultivation methods with aromatic cocoa plants. This at the time was a courageous choice, because these are the rarest, most delicate varieties of cacao with the least production yield. In fact, fine cocoa represents only 10% of the world cocoa crop, while Criollo, the rarest cocoa variety in the world, represents <0.01%. The three “Fine” cacao beans are known to be of the Criollo, Trinitario, and Nacional varieities.

Domori produces a wide range of aromatic profiles through their chocolate blends, while simultaneously respecting and preserving the biodiversity of fine cocoa. Domori continues to focus to protect these valuable varieties of cocoa, their natural habitats, as well as the farmers who work on the plantations cultivating the delicate crops. In 2002, Domori invested in Hacienda San Josè, preserving seven different varieties of Criollo cocoa, creating a universal world heritage for its biodiversity.

Domori has the largest collection of Criollo cacao beans in the world, seen as a world heritage for the taste and recovery of biodiversity. Criollo is the rarest and most prized variety of cacao, but on the verge of extinction this past century: it is the cacao of the Mayas and the Aztecs, whose cultivation has been continuously abandoned due to its low yield. It is a rare and fragile cacao and represents less than 0.01% of the world’s global cocoa production. The quality of this cacao is unmatched, naturally free of tannins, and boasts a creamy, rounded and sweet taste. With the Criollo Project, founded in 1994 thanks to Gianluca Franzoni, Domori has recovered this precious variety of cacao, also incorporating Hacienda San José in Venezuela, the largest Criollo plantation in the world.
