With Dulcey, Valrhona invented chocolate’s fourth color: Blond (caramelized white). Leaving white chocolate in a bain-marie for too long, Valrhona Chef Frédéric Bau discovered a surprising result: the chocolate became blond and gave off a sweet smell.
